Yesterday was...Long. Tag came to my rescue at dinner. I served Talapia (every kids' favorite). Thatcher kept calling it Talafia. Tag took his seat and with wide eyes said "I can't wait to try the Taffy-Laffia"! What a disappointing meal!
I really don't like fish, however, my friend brought us a Tilapia meal and I LOVED IT! I thought I would share the recipe with you:
Tilapia Delight
1 lb Tilapia 1/2 cup chopped tomatoes 1/3 cup chopped onion 2 T. water 2 T. olive oil 4 1/2 t. lemon juice 1 t. dried parsley flakes 1/2 t. minced garlic 1/2 t. basil (fresh or dried works) 1/8 t. salt 1 t. Seasoning Salt
Place fillets in a shallow microwave-safe dish. Combine everything but seasoning salt in a bowl. Spoon over fish. Sprinkle with seasoning salt. Cover and microwave on high for 6 minutes or until fish flakes easily with a fork.
